A back to back rind on pork loin pocketed out and stuffed with a delicious and warming blend of cloves, cinnamon, ginger and apple flakes rolled together to create the ultimate pork roast with double crackling!

Cooking Instructions

When ready to cook, rub the skin of the joint with plenty of salt. Put it on a wire rack and roast at 200C/180C fan/gas 6 for 30 mins. After this time, turn the heat down to 180C/160C fan/gas 4. Roast for a further 2hrs 25mins for a 2Kg Joint, 3hrs 30mins for a 3Kg Joint or 6hrs for a 5Kg Joint Finally turn the heat back up to 220C/200C fan/gas 7 and give it a final blast for another 20 mins or so, to finish the crisping of the skin.

Once cooked cover loosely and rest for twenty minutes before eating.

If you have a meat thermometer, the internal temperature should be 70°C
